The sweet, tangy fruit is juicy and colorful and makes the perfect garnish for a salty salmon fillet. Pair it with your favorite whole grains and crunchy vegetables for a delicious, balanced meal!

Roasted Salmon with Mandarin Salsa

Ingredients

  • 2 4-ounce salmon fillets
  • 1 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 2 tangerines, peeled and chopped
  • 1 jalapeno pepper, chopped
  • 2 tablespoons green onions, chopped
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro, chopped

Instructions

Preheat oven to 400ºF (204ºC). Arrange the salmon fillets on a small baking dish, skin side down. In a cup, mix chili powder and salt and sprinkle over salmon. Roast for about 12 to 15 minutes or until it reaches an internal temperature of 145ºF

For the salsa, combine the oranges, jalapeño, green onions, lime, and cilantro in a small bowl and toss. Makes 3/4 cup salsa.
