Served with an antioxidant-rich berry sauce, this French toast recipe is as decadent as it is nutrient-rich. Cooking all the French toast at once means you can serve breakfast to the whole family at once, without standing at the stove and finishing batches while everyone digs in.

The carbs, protein, and total calories of this breakfast depend on the bread you use. If you’re looking to cut calories or carbs, you can choose a “thin-sliced” bread, but if you’re trying to get more protein or have a hearty breakfast, get a standard-sized whole-grain bread. Sprouted bread also tends to contain more protein than regular bread. Pair this French toast with some scrambled eggs or Greek yogurt for a complete breakfast!

Sheet Pan French Toast with Mixed Berry Sauce

For: 4 | Serving size: 2 slices of bread, 5 tbsp/74 ml sauce

Ingredients

  • 8 slices of sprouted whole wheat sandwich bread
  • 4 large eggs
  • 1/3 cup (83 ml) orange juice, freshly squeezed, divided
  • 1 tablespoon finely grated orange zest
  • 2 teaspoons of vanilla extract
  • 1/2 teaspoon freshly grated nutmeg
  • 1 cup (244 ml) skim milk or plant-based milk of your choice
  • 1 cup (150 g) blueberries
  • 1 cup (150 g) strawberries, sliced

Instructions

  1. Preheat the oven to 425°F (230°C). Generously coat a 13 x 18 inch (33 x 46 cm) rimmed baking sheet with cooking spray. Arrange the bread slices against each other on the pan in a single layer.
  2. In a medium bowl, whisk eggs, 1/4 cup (59 mL) orange juice, orange zest, vanilla extract, and nutmeg until completely combined.
  3. Add milk and whisk to combine.
  4. Slowly pour the egg mixture evenly over the bread slices. Tilt the pan so the bread absorbs the egg mixture. Bake in the lower third of the oven until the bottom is golden brown, 10 minutes.
  5. Meanwhile, make the berry sauce: Combine the berries and remaining orange juice in a medium sauté pan and bring to a boil over medium heat, stirring occasionally, until the fruit begins to break down and the juices have reduced slightly, 2 minutes. Reduce heat to low and keep warm.
  6. Move the baking sheet to the upper oven rack (6 inches/15 cm) from the broil element. Turn the oven to broil and broil on High until the bread is puffed and golden brown on top, 1 1/2 to 2 minutes.
  7. Serve the French toast with the sauce and enjoy!
