Coconut and green apple muesli

Muesli is a cold porridge made from oats, fruit and milk or yogurt that can be eaten immediately or left to soften in the refrigerator overnight. However, don’t let this modest dish fool you. Something magical happens as muesli sits in the fridge over time, transforming oatmeal into a soft, creamy, satisfying breakfast.

Coconut and green apple muesli

Ingredients

  • 1 1/2 cups (368 g) 0% plain Greek yogurt
  • 1/2 cup (122 g120 ml) unsweetened coconut milk
  • ¼ cup (62 g) freshly squeezed orange juice
  • 2 tablespoons light honey or maple syrup
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon kosher salt
  • 1 cup (80 g) oatmeal
  • ½ cup (46 g) sliced, toasted, unsalted almonds
  • ½ cup (59 g) nuggets, roasted and unsalted
  • 1/2 cup (21 g) unsweetened shredded coconut
  • 1 large Granny Smith apple, cored and grated

Optional toppings

  • Ground cinnamon, for sprinkling
  • Honey or maple syrup, for drizzling
  • Toasted grated coconut
  • Grated apple
  • Chopped toasted nuts, such as almonds, hazelnuts, or walnuts

Instructions

In a medium bowl, whisk the yogurt and milk with the orange juice, honey, cinnamon and salt. Stir in oats, almonds, sprinkles, coconut and apple until well combined. Scrape the muesli into four 1-cup jars with tight-fitting lids. Refrigerate for at least 1 hour, preferably overnight.

Eat straight from the jar, garnished with cinnamon, honey, toasted coconut, grated apple, or toasted nuts, if desired.
